More Wonderful Winey Words

  • Bung - the plug which seals the barrel.
  • Bunghole - the hole in the barrel where the bung goes.
  • Brettanomyces – which wino's shorten to Bretts. You don't want that – it's a yeast which spoils the wine making it taste mousy or metallic) 
  • Barrique - 225 litre wine barrel
  • Foxy - a musty odour & flavour of a specific wine.
  • Lees - sediment consisting of dead yeast cells, grape pulp, seed, and other grape matter that accumulates during fermentation.
  • Must - unfermented grape juice, including seeds, skins, and stems.
  • Negotiant – a wine merchant
  • Phylloxera - a microscopic insect that kills grape vines by attacking their roots which is why all grape vines are grafted onto the disease resistant North American root stock. 
  • Ullage - the space left in bottles and barrels as wine evaporates.
